What’s going on!
I threw a small 1st birthday gathering for Olive last weekend. It was an Olive theme, so her smash cake was an Olive, and the whole menu was planned around the ingredient; olives. It truly takes a village! My mom helped me with half of the menu, decor, and set up. My mother-in-law helped with the prep & set up. And all of the boys ran the errands!
This was the first time Olive was introduced to sugar so I thought she was going to smash the cake and dive in head first. But nope! She was graceful & so sweet about it. She didn’t want to ruin the beautiful cake!
Here was what was on the menu…
Hummus crudete board, with the world best hummus by my mom. I think 6 people left with the written recipe!
Tortellini pasta skewers, I shared this recipe a few months back!
Whipped goats cheese dip with roasted olives and olive bread.
Greek quinoa kale salad with artichokes.

Tortellini pasta salad for picky eaters!
This recipe is incredibly versatile. Use any tortellini available to you, and feel free to make it meatless or with meat.
Not a fan of salami? Swap it for oven-roasted turkey breast, chicken breast, or ham.
If you want to go meatless, simply omit the deli meat and add a can of drained and rinsed chickpeas for protein.
Serve it chilled, great for a park or meal prep ready to go in the fridge!
