What’s going on!

I threw a small 1st birthday gathering for Olive last weekend. It was an Olive theme, so her smash cake was an Olive, and the whole menu was planned around the ingredient; olives. It truly takes a village! My mom helped me with half of the menu, decor, and set up. My mother-in-law helped with the prep & set up. And all of the boys ran the errands!

This was the first time Olive was introduced to sugar so I thought she was going to smash the cake and dive in head first. But nope! She was graceful & so sweet about it. She didn’t want to ruin the beautiful cake!

Here was what was on the menu…

  • Hummus crudete board, with the world best hummus by my mom. I think 6 people left with the written recipe!

  • Tortellini pasta skewers, I shared this recipe a few months back!

  • Whipped goats cheese dip with roasted olives and olive bread.

  • Greek quinoa kale salad with artichokes.

  • Persian potato salad, my moms recipe!

  • Persian vegetarian dolmas, my moms recipe!

  • Simple greens salad with my homemade salad dressing

  • Sandwiches picked up by Capriottis!

Please leave a comment if you want any of the recipes & I will share them in the coming weeks Substack emails!

What I am making this week!

Tortellini pasta salad for picky eaters!

  • This recipe is incredibly versatile. Use any tortellini available to you, and feel free to make it meatless or with meat.

  • Not a fan of salami? Swap it for oven-roasted turkey breast, chicken breast, or ham.

  • If you want to go meatless, simply omit the deli meat and add a can of drained and rinsed chickpeas for protein.

  • Serve it chilled, great for a park or meal prep ready to go in the fridge!

make them!

What I’m obsessed with.

Superhuman Activations for mental health

I got a little anxiety attack on the morning of Olive’s birthday party. And I truly couldn’t control my emotions. But luckily, it only lasted for 30 minutes, and to get out of my headspace, I listened to a Superhuman activation.

Activations are a blend of guided visualizations, emotional music & motivational affirmations you can do anywhere (while cooking, cleaning, driving, grocery shopping or skincare). It isn’t “meditation” but rather compliments your life as it seamlessly

I am a full paying customer & have been for 4 years. I tagged them so many times, they are offering you 100% off 1-month Superhuman Meditations monthly subscription + 2-week free trial (total 6 weeks free membership). Ok, let’s get to the new recipe!👇🏼

New recipe!

My high protein cheesecake bites will be your new favorite treat for the summer! Here’s why!

  • It’s a healthy alternative to traditional cheesecake! Without the loaded sugar, refined flour and processed fat.

  • It’s gluten free! I use almond flour to make it suitable for those following a gluten free diet.

  • Made in small portions! I love this because it’s a quick bite to eat, and no mess of cutting or uneven portions.

  • Can easily be customized! You can add a dark chocolate drizzle, nuts, crushed Oreos or whatever your favorite toppings are on top!

  • It’s easy to make! I don’t call myself a baker, and this is truly such an easy recipe, even the most novice cooks can make it.

  • Creamy & luxurious! The cottage cheese makes it creamy and decadent!

Here are the macros!

  • 60 calories per serving

  • 5g protein per serving

  • 3g fat per serving
