It’s Super Bowl month!

This week I am sharing my simple cauliflower “wings” recipe so you can make it for game day next weekend!
My husband loves wings.. and when I say loves.. he REALLY LOVES WINGS.
I made these for him & he was shook over how delicious, crispy and crunchy they were. He dipped them in a my homemade ranch dressing and ended up eating the entire head of cauliflower in one sitting!

Surprise, i’m pregnant!
I’ve fully been hiding my pregnancy for 6 whole months.. don’t ask me how (lol)
The reason why was because I really wanted to enjoy the emotions of being pregnant without having to post about anything. I enjoyed keeping the secret with just my close family & friends! It was quite special.
But I will say, ever since I shared the news last week, I felt such an outpour of love, so THANK YOU. Thank you for making me feel safe enough to share the news & this new journey we are on!
I asked you if you had any questions over on Instagram, so I am sharing some of the answers here!
Do you know the gender? Yes we do, not sure when I will share that though!
Do you have names? Yes, we are set on a name (first and middle)!
When are you due? Early May, as I am writing this, I am 27 weeks pregnant!
Can you share prenatal vitamins? I have been taking Binto vitamins. We knew we wanted to start trying so I began taking them 4 months prior to conception. It helped a ton with getting all of the right nutrients in! Here’s why I like them:
I took a personalized quiz which asked me a series of questions regarding my health, goals, and struggles.
The system recommended a few different supplements for me, depending on my answers! I was recommended a prenatal, zinc (for my breakouts), fish oil and even an egg quality supplement. But you could be recommended something completely different!
It comes in individual daily packets, so I just grab a packet & take all the vitamins. No need for a million bottles (great for travel too).
It’s a female founded women’s reproductive health company & they really care about educating the consumer (they have a huge blog of articles for infertility, postpartum etc).

Buffalo Cauliflower Wings with a Healthy Ranch Dip
Grocery List
Substitutions are listed next to each ingredient!
Produce
1 head of cauliflower - alternatively, a bag of chopped fresh cauliflower florets
1 lemon
2-3 chives, fresh
Refrigerated
1 egg
3/4 cup Plain Greek Yogurt - if dairy free, use a dairy free thick yogurt, plain
Pantry
1 1/2 cup almond flour - swap for gluten free flour or regular flour
1 cup of buffalo sauce - I like using primal kitchen because its made from cashew butter
Spices/Oils
2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon dill, dried or fresh
1 teaspoon salt
1/2 teaspoon paprika
1/4 teaspoon black pepper
Buffalo Cauliflower Wings with a Healthy Ranch Dip
Cauliflower contains B vitamins, which is great for energy production, helps the body use protein and is great for brain function!
Prep time: 15 minutes
Cook time: 30 minutes
Total time: 45 minutes
Ingredients
1 large head of cauliflower (about 4-5 cups chopped)
1 egg
1 1/2 cup almond flour
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon paprika
1 cup your favorite buffalo sauce
Directions
Wash, then chop cauliflower into even florets, alternatively, you can purchase the bag of cauliflower florets to save time.
In a large bowl, whisk 1 egg. Add the chopped cauliflower and mix well for a minute until the cauliflower is evenly coated.
In a small bowl, combine the almond flour, garlic powder, salt and paprika. Add the mixture into the bowl with the egg and cauliflower & coat well.
Place the cauliflower in the preheated air fryer (4 minutes). Air Fry at 400F for 12 minutes, shaking half way.
Remove from the air fryer, toss the buffalo sauce in the cauliflower & air fry again for an additional 6 minutes.
Healthy Homemade Ranch Dip
3/4 cup plain whole milk, full fat greek yogurt
1 teaspoon lemon juice
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon chives, chopped
1 teaspoon dill, dried
1/2 teaspoon salt
1/4 teaspoon black pepper
Directions
Mix all ingredients in a small bowl.
Transfer into a serving bowl to serve with the buffalo cauliflower!
Notes
Alternately, you can bake this in the oven at 425F for about 20 minutes, then broil for an additional 5-6 minutes with the sauce.
If you want to make your own buffalo sauce, just mix:
2/3 cup red hot
1/2 cup butter
2 tablespoons white vinegar
1/2 tsp worcestershire sauce
a bit of cayenne pepper, salt and pepper.
Store the cauliflower in an airtight container in the fridge for up to 3 days.
Store the ranch in an airtight container in the fridge for up to 4 days.
To reheat, just place in the air fryer for 5 minutes at 350F.
