Life Lately…
The summertime can be crazy time of year. Kids are out of school, the sun is shining, vacations are happening and routines are out the window. But honestly, I am someone who thrives on routine. If I don’t have somewhat of a routine Monday - Thursday, I feel ungrounded and off. Which brings me to my story… I started this month off with a trip to Lake James, Indiana for our families engagement party, then back to St Pete, Florida to visit our friends after moving away!
We spent 8 days surrounded by other people, outside of my normal routine, no meditation, no journaling, no working out, no time alone to regroup. By the time the trip was over I felt so off and moody! The first thing I did when I got back home was unpack & get organized.
I took some time to set out a plan of things I would like to accomplish for the month, then broke those tasks down week-by-week. I even got super granular and wrote down things that make me feel happy; like working out, meditation and journaling. I knew I had to start somewhere.
I took all of those tasks and put them into a virtual calendar Monday - Thursday (including those silly tasks)! This helps me keep on track, stick to a routine (that works for me), and even schedule in down time. It leaves Friday - Sunday to be playful, go with the flow and have a little bit of spontaneity. Here’s a sample of what one of my days looks like:
7 AM: Meditation & journaling outside.
7:30 - 9:30 AM: Workout class or outdoor walk.
9:30 - 10:30 AM: Shower, get ready for the day & enjoy breakfast.
10:30 AM - 4:30 PM: Work tasks (this will look different for everyone)
4:30 PM - 5:30 PM relaxation time (outdoor walk, stretch, meditation, read, chat on the phone)
5:30 - 7:30 PM: prep dinner and enjoy dinner
See how easy that was? I scheduled activities that made me feel grounded and safe into my day, because they are as much of a priority as work is! I hope this helps for those feeling out of balance right now. I know it can be overwhelming juggling life. But we can control how we spend our time so I try to be intentional about that.
Coconut Shrimp with a Mango Dipping Sauce
I’m missing Florida lately, and one thing on the menu at every single restaurant by the beach was coconut shrimp! Here’s a way to bring the tropics into your home, wherever you may be this summer! You’ll need: coconut flour (as an alternative to flour), unsweetened coconut (as an alternative to sweetened coconut) and of course, my favorite kitchen gadget, an air fryer!
Makes: 10 - 15 large shrimp
Serves: 2-4 people
Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 25 minutes
COCONUT SHRIMP INGREDIENTS
1 pound large shrimp (peeled and deveined)
2 eggs, beaten
1 1/2 cup shredded coconut, unsweetened
1/2 cup coconut flour
1 tablespoon coconut milk
1/2 teaspoon garlic powder
1/4 teaspoon paprika
1/4 teaspoon turmeric
1/4 teaspoon salt
MANGO SAUCE INGREDIENTS
1 ripe mango, peeled & sliced
2 tablespoons coconut milk
1 tablespoon honey
1 tablespoon lime juice
1/2 teaspoon salt
DIRECTIONS
For frozen shrimp, place in a colander and run it under some cool water. After just 3-4 minutes, it should be good to use!
Place the shrimp on a paper towel to absorb any access liquid.
Now prepare your 3 bowls:
Bowl #1: coconut flour and spices
Bowl #2: coconut milk and eggs
Bowl #3: shredded coconut
Dip the shrimp one by one into bowl #1, then coat it in the egg wash and lastly in the shredded coconut.
Lay it flat in an air fryer basket (coated with avocado oil or coconut oil). Repeat with the rest of the shrimp. Air fry the shrimp at 375 F for 10 minutes.
While the shrimp are cooking, make the sauce: blend all of the ingredients in a high powered blender for about 20-30 seconds until smooth and creamy. Serve in a small bowl for dipping shrimp.
Serve the shrimp immediately and enjoy!
