Dairy Free Coconut Strawberry Ice Cream
because it’s almost summer time!
There is no need for an ice cream maker.. because who really has one anyway?
You only need a few simple ingredients, with no dairy!
I made this a lot when we lived in Florida. It was always so hot there, and we were always craving something cool and refreshing.
Here are the main ingredients…
unsweetened condensed coconut milk or coconut cream: it can be found in all grocery stores now! Note, if you’re using the condensed coconut milk, you may not need any additional sweetener!
frozen bananas: the best trick is to just freeze those spotty bananas vs. throw them away! The more ripe the banana, the sweeter it will be! To freeze, just remove the peel & throw them in a stasher bag in the freezer!
freeze dried strawberry powder: I love this for smoothies too but if you don’t have it on hand, you can use regular or frozen strawberries blended! You can grab it on Amazon.

Pregnancy update!
My due date is May 2nd! And as I am writing this, I am 36 weeks! I have been planning all of this content ahead of time & scheduling it so you get it from me when you’re supposed to! However, I don’t know when baby girl will be here so make sure to follow along on Instagram for real time updates!

My pregnancy favorites…
I thought I would share some of my favorite things that got me through pregnancy for anyone else that is expecting or has friends/family expecting!
Magnesium / Ball / Probiotics / Pillow
Calm Magnesium Supplement: So far this has worked wonders & I haven’t had any issues sleeping. I just add 1 tbsp into warm water before bed, and it helps put me right to sleep! It also helps offset the weird leg cramps that happen during pregnancy! They have different flavors!
Birthing Ball: I sit on this every single night or even at my desk to work! It helps open the hips. It also helps with positioning of the spine & I can tell my back feels really great on days I use it vs. days I don’t!
Seed Probiotics: Digestive issues are a real thing during pregnancy! So these have been a game changer for overall digestive help & keeping my body regular! Pregnant or not, you take them first thing when you wake up in the morning. You’ll notice a difference in your skin, immune system & digestion. Pregnancy Pillow: This is a game changer for sleep. As you get bigger and bigger, you can’t sleep on your stomach or back! So this helps with alignment when sleeping on your side. However, here’s the trick. Don’t use the pillow part as your actual pillow. Make it a U-shape but facing the opposite way! Use your own pillow! Literally best purchase ever!
Coconut Strawberry Ice Cream Grocery List
Substitutions are listed next to each ingredient!
Produce
1/2 cup fresh strawberries, chopped - this is optional for topping
Frozen
2 frozen bananas
Pantry
1 (11 oz) can of sweetened condensed coconut milk - substitute for 1x (14 oz) can of coconut cream.
**If using coconut cream instead, since it doesn't contain any sugar, just add 2 tablespoons - 1/4 cup of any sweetener of choice (maple syrup, agave, coconut sugar, brown sugar etc.)
1/3 cup freeze dried strawberry powder - alternatively, you can use frozen berries. If using frozen berries, use 1 cup!
1 teaspoon vanilla bean paste - substitute for 1 teaspoon of vanilla extract
1/4 cup chocolate chips + 1 teaspoon coconut oil - this is optional for melting and drizzling on top of the ice cream.
Appliances & Cookware Needed
1x blender - this is a great affordable, compact blender
1x can opener
1x Tupperware container or mason jar for storing
Dairy Free Coconut Strawberry Ice Cream
…no ice cream maker needed
Serves: 2-4 (about 6 cups)
Prep Time: 5 minutes
Total Time: 8-12 hours
Ingredients
1x (11.3 oz) can of sweetened condensed coconut milk
1/3 cup freeze dried strawberry powder
2 frozen bananas
1 teaspoon vanilla bean paste
1/2 cup fresh strawberries
Optional
Melted chocolate for drizzling
More strawberries on top
Directions
Add the condensed coconut milk, strawberry powder, bananas and vanilla into a blender & blend on high for 30-60 seconds until smooth.
Taste this to ensure sweetness is to your liking! You can always adjust and add more strawberry flavor, sugar or vanilla!
Pour it into a plastic freezer safe container, add in a few chopped strawberry pieces & throw in the fridge for at least 8 hours.
The next day, remove from the fridge, add some melted chocolate and more fresh strawberries as a topping. Enjoy chilled
Storage
Store the ice cream in an airtight container (jar or Tupperware work great), in the freezer for up to 3 months!
