No Bake Coconut Truffles
I love coconut. I feel like it has such a tropical flavor that always makes me feel like I am on vacation.
With that said, I love treating myself to foods that make me feel like I am on vacation!
You'll need a few simple ingredients. One of them being coconut butter. Now this isn't the same thing as coconut oil, and it won't work as a substitute. Coconut butter is made from the actual coconut meat. You can make it yourself by blending shredded coconut for like 15 minutes until it becomes a butter consistancy. I tried it once, it didnt work. Or maybe I didn't have enough patience for it...
Coconut butter is ingredient that can be a tiny bit pricy if you get it at Whole Foods but I found mine on Amazon for about $12 a jar. It'll last you a few years honestly. Other uses for coconut butter include putting a spoon in your coffee, tea, matcha or lattes. It makes for the creamiest drink.
So trust me, you'll use it a ton. And if you don't want to add it into your coffee then just make this coconut truffle recipe 100x!

NO-BAKE COCONUT PROTEIN TRUFFLES
Vegan
Gluten Free
Refined Sugar Free
Dairy Free
Soy Free
Makes: 22 truffles
Prep Time: 5 minutes
Total Time: 10 minutes
INGREDIENTS
1 cup unsweetened shredded coconut + 2 tablespoons for rolling
1/2 cup coconut butter, melted & cooled
1 scoop vanilla protein (optional) - I used Nuzest Clean Lean V,anilla Protein. It's a vegan protein powder made from peas. Use the code recipes4health for a discount if you want to give it a try!
1 tablespoon coconut oil, melted & cooled
1 teaspoon maple syrup (optional for added sweetness)
1/2 teaspoon cinnamon
1/2 teaspoon vanilla extract
1/4 teaspoon sea salt
DIRECTIONS
Add all of the ingredients into a bowl, stir with a spatula to combine.
Refrigerate for 5 minutes to set.
Roll into 1 tablespoon size balls with your hands, then roll in shredded coconut. Store them in an airtight container in the fridge!
