Creamy Spinach Lasagna Roll Ups
This delicious & beautiful dish is perfect for a family or friend get together!
It is really easy, made with simple ingredients & my goal is to teach you a few ingredient swaps so you can learn to use what you have on hand!
I also walk you through how to make it gluten free with a simple noodle substitute.
Although this dish is completely vegetarian, it is quite simple to add a protein of choice. If you were to add a protein, just use any ground meat!
To do this… pan sear the ground meat in a skillet for 10 minutes until it’s cooked through & no longer pink! Add this to the filling (you’ll see how easy it is).
My goal with this recipe is for you to feel more comfortable in your own kitchen!
Let’s talk about the ingredients…
Lasagna noodles: I like to use chickpea noodles, this is just a way to increase the protein, make them gluten free and also add fiber! Banza has a great line of chickpea lasagna noodles, it’s the one in the orange box! Available at Whole Foods, Sprouts and Target.
Dairy free cream cheese: I know not everyone in this community eats dairy. However, if you happen to eat dairy, you can swap the dairy free cream cheese for regular cream cheese, ricotta, whipped cottage cheese or mozzarella. Use what you have!
Pasta sauce: I include so many different pasta sauce options, so don’t worry. If you love tomato sauce, use marinara! If you’re not a tomato fan, you can use Alfredo, pesto, roasted red pepper sauce, or any vegan pasta sauce on hand.
Other optional add ins: We keep this recipe simple, but you will see how you can build upon it. I love adding mushrooms, chopped bell peppers, carrots, celery, sun-dried tomato, olives or even ground meat for an additional punch of protein!
