Double Chocolate Brownie Baked Oats (vegan + gluten free)
So this "baked oats" trend has been going on for quite a while on TikTok and I had to finally give it a try. I am such a fan of sweet breakfasts so this was right up my alley. I knew I needed to go for something chocolate because, why not start your day with a hefty load of chocolate? That's my motto.
We use pantry staples in this recipe! Open up your pantry, grab your oats (which I feel like everyone should always have on hand). Oats are so versatile, obviously the good old fashioned oatmeal is a breakfast on my menu a few times a week. You can also pulse oats to create oat flour which I think is a financially great substitute for any other speciality gluten free flour.
I also think chocolate protein powder is a must have. If you do not have the protein powder, just substitute it for collagen, or any other protein powder you have! Of course, by not using chocolate protein powder, it may not turn as ooey gooey chocolatey, but it'll still be delicious!
This is one of those breakfasts that takes 5 minutes to actually create, then you'll bake it for 20 minutes, let it sit for 10 minutes and you're good to dig in! Usually while this is baking, I will check emails, do laundry, clean the house and time flies!
Ok, let's get to the recipe!
Double Chocolate Brownie Baked Oats
Makes: 2 servings
Prep Time: 5 minutes
Cooking Time: 20 minutes
Total Time: 35 minutes (includes cooling & cooking time)
INGREDIENTS
3/4 cup oats (use certified gluten free if necessary)
2 scoops chocolate protein powder
2 tablespoons cacao powder
1 ripe banana
1 cup milk of choice (plant based milk, or regular milk works great)
1 teaspoon sweetener of choice (maple syrup, honey, brown sugar, coconut sugar etc.)
1 teaspoon baking powder
Pinch of sea salt (don't skip this)
1/4 cup chocolate chips
DIRECTIONS
Preheat the oven to 350 degrees Fahrenheit (or I use my air fryer bake option to use less energy).
Into a blender, add the oats. Blend for about 20 seconds until oat flour is formed!
Now add the rest of the ingredients (except the chocolate chips). Blend again until smooth (about 30 seconds).
Coat 2 oven safe ramekins with coconut oil or butter. Pour the batter evenly into the baking dishes. Stir in chocolate chips!
Bake for 20 minutes, then let it sit for 10 minutes before digging in! You want to ensure you let it sit for 10 minutes just because the oats will continue to cook!
Top with your favorite toppings!
Topping Options:
Any nut/seed butter, allow it to melt into the warm baked oats.
A spoon of your favorite yogurt!
Chopped nuts/seeds.
Fresh berries, like raspberries or strawberries!
