Costa Rica was such an adventure, from hiking to zip lining, seeing so many sloths & playing with monkeys. It absolutely deserves it’s own blog post. I’m working on that now. So if you’re thinking of taking a trip to Costa Rica; I will share what I recommend, how to travel, what to do, and what to bring!

Since getting back from vacation, I have been very into calming my energy & space. One of the big ways I achieve that is through ambiance of the home! Now let’s make your life a little easier by showing you how you can make 6 breakfast recipes in 30 minutes!
Overnight Oats + Chia Pudding Meal Prep
If I know I have a busy week ahead, I like to prep some of my meals.
Overnight oats are packed with fiber and healthy complex carbohydrates to keep your energy up throughout the day!
Chia pudding is actually SO GOOD. Don’t knock it until you try it! It has tons of healthy fats, which helps keep you fuller for longer! Plus, it’s loaded with protein!
The best part of both of these breakfasts are the toppings! So feel free to get creative with it. Some of my favorite toppings are:
Strawberries, banana slices, fresh or frozen blueberries
Cacao nibs or chocolate chips
Coconut flakes
Sliced almonds, pecans, walnuts
Nut or seed butter
Granola
Honey or maple syrup
Overnight Oats Recipe
Total Prep Time: 10 minutes
Makes: 3 servings
Ingredients:
1 1/2 cup plant based milk (i.e. almond, oat, hemp, soy, any kind works)
1 1/2 cup rolled oats (use gluten free if necessary, you can also use quick cooking oats, but not steel cut oats)
3 tablespoons chia seeds
3 tablespoons your favorite nut butter (peanut, cashew, pecan, sunflower etc.)
3 tablespoons maple syrup (optional depending on taste)
Pinch of salt (for each)
Optional: 3 scoops of your favorite protein powder or collagen
Directions:
Line 3 jars (with a lid) next to each other.
Add 1/2 cup milk + 1/2 cup oats + 1 tablespoon (each) of chia seeds, nut butter and maple syrup), protein powder and a pinch of salt in each jar.
Stir with a spoon.
Cover and refrigerate for at least 6 hours or overnight! This lasts about 4 days in the fridge!
Top with your favorite toppings the day of!
Chia Pudding Recipe
Total Prep Time: 10 minutes
Makes: 3 servings
Ingredients:
1 can (12 oz) canned unsweetened coconut milk
1/2 cup any plant based milk
1/2 cup chia seeds
1 teaspoon vanilla extract
2 tablespoons - 1/4 cup maple syrup depending on preference (or any other liquid sweetener)
1/2 teaspoon cinnamon
1/4 teaspoon salt
Optional: 1-2 scoops of any collagen or protein powder on hand
Directions:
Mix everything into a large bowl and whisk. Continue to whisk every 1 minute until chia seeds slightly thicken. They will continue to thicken in the fridge. We just want to make sure we remove any clumps!
Pour mixture into evenly into 3 glass jars with lids, refrigerate for at least 6 hours or overnight! This lasts about 4 days in the fridge!
Top with your favorite toppings the day of!
