There’s something about eating pancakes as an adult.. It makes me happy and very nostalgic of childhood. I feel like every adult should eat pancakes once a week, that’s why i’m sharing this recipe!

These vegan oatmeal protein pancakes are made in just one blender! Add the ingredients, and blend for 20-30 seconds then your batter is ready to go. Perfect for busy moms with kids! Plus, it’s allergen friendly with no dairy, eggs, nuts or seeds.

Best part? It makes a HUGE batch of 12-14 pancakes so you can save the rest in the freezer for an easy meal prepped breakfast!

I have a batch of these pancakes sitting in my freezer right now. When I need breakfast, or even a snack I remove a few of the pancakes from the ziplock in my freezer, and throw it into my air fryer for 6 minutes to heat up.

My favorite pancake toppings: maple syrup, peanut butter and frozen blueberries (heated up in the microwave for 30 seconds).
