What’s going on..
If you read my newsletter last week, you got my protein bliss ball recipe 🤤 Now here are a few updates just to bring ya up to speed! This was the first week (that as a collective family) we were not sick in over 4 weeks! I honestly forgot what it felt like to feel healthy, and I am SO grateful.
Troy and I went on our very first “date” after 8 months. Yup, you heard that right. 8 whole months since we went out by ourselves. You may think we are crazy, but we don’t live near our family & it’s not as easy as someone popping over to watch Olive while we go out.
My mother-in-law drove from San Diego to watch Olive so we could head out. And we went on a beautiful hike and then hit up the farmers market for some juice & fresh produce after!
I am also trying to do more activities with Olive.. this week we went shopping at the Nike Outlet, we went to the grocery store a few times, watched Troy’s basketball game (they won, yay!), went out for pizza as a family & also went for ice cream. She is almost 10 months, and she enjoys the adventure! Here’s a picture after dad’s game! She had a great time cheering the team on!

Why You Will Like This Recipe!
It’s quick and easy! The prep time is less than 10 minutes, and it only requires a few simple pantry and fridge ingredients!
Versatile! You can serve it as a main dish, on top of salads, or even as an appetizer for gatherings!

I am making the move towards a non-toxic household. One swap I just made is dishwasher detergent pods. I am really happy with how these Seventh Generation ones are cleaning my dishes (we run the dishwater 1x/day). They are on Amazon.

Ok, let’s get to the new recipe!👇🏼
My easy ramen bowl
Total time: 20 mins
Serves: 4
INGREDIENTS
2 eggs, hard boiled
12 oz bone broth
8 frozen dumplings
2 packets of ramen noodles
1 bag of any veggie mix
2 handfuls of spinach
4 green onion, cut on a bias
1 tablespoon sesame seeds
1 teaspoon sriracha
Optional add ons:
Chili Oil
Bok Choy
Garlic powder
Ginger powder
Seaweed flakes or sheets
Here are the specific products I used!
DIRECTIONS
Hard boil eggs:
To hard boil your eggs, just add 2 eggs into a small saucepan and fill with water. Set a timer for 15 minutes, allow it to boil and cook. Once the timer goes off, drain the water and fill up the stockpot (with the eggs in it) with ice and water. Allow them to sit for 5 minutes to cool off. This step with the ice will make it super easy for the peel to come off. Just peel the shell off, then cut in half. This is ready for your ramen bowl!
For the ramen:
Meanwhile as the eggs are boiling, add the broth into a big stockpot. Turn it on medium heat and allow it to warm up.
If you are adding the dumplings, add your dumplings and allow them to cook for a total of 8 minutes in the water.
After 4 minutes, add the noodles, veggie bag, spices like garlic powder, ginger powder, and any additional seasonings. If you want to add the ramen packets, add this now!
The noodles and veggies need like 3 minutes to cook, so just continue stirring during this process.
I like to add the spinach towards the last minute.
Once it’s ready to serve, spoon it into a big bowl, add your egg on top, along with a sprinkle of green onion, sesame seeds, sriracha and any other optional toppings. Enjoy!!
