This winter kale and apple salad uses ingredients that are in season! When you head to your grocery store, you can pick everything up from the grocery list, it’s all easily accessible and affordable!
Last week I polled my community on Instagram on what kinds of recipes they wanted to see. An overwhelming amount of people said they wanted quick 15-20 minute meals, even better if they are meal prep friendly and great for a weekday lunch.

It is simple, only uses a few ingredients, and the apple cider vinaigrette is the best dressing for any roasted veggies or protein this time of year, so you can repurpose!
This dish is gluten free, grain free, tomato free and soy free.
This can also be made nut free or vegan with a few easy substitutions (shown in the grocery list below)!
