If you’re new here, I was a private chef to NBA athletes for a few years. This dish was on our weekly menu! Why? Because athletes LOVE pasta as their pre-game meal. It helps give them energy & sustain their stamina for the game!
I was really careful about putting light & fresh twist on this dish. I didn’t want the food to make them feel lethargic and tired. So I came up a few simple swaps to make the best light, gluten free chicken piccata!
Now I know we are not all getting ready to go perform in front of a crowd of 18,000 people… But I argue WE OURSELVES are just as important to nourish & fuel!
This recipe only takes 30 minutes, and the last 15 minutes is just the chicken sitting in the delicious lemony juices getting tender & moist! I love to utilize those last 15 minutes as clean up time. There’s nothing better than serving dinner having dishes loaded into the dish washer and the kitchen clean!
It also makes enough for 4 people, which means you cook once, and potentially can have leftovers the next day!

LEMON: You have a lot of lemon in this recipe, which is filled with vitamin C! Great for strengthening the immune system and fighting infections. Lemons also help keep the bones, skin and joints firm and strong!
