This is one of those meals that only takes 20 minutes to whip up on a Sunday night & you will be set for the week!
I love that while the water for the pasta is boiling & the pasta is cooking, you can chop all of your veggies. That way, it comes together seamlessly!
The Italian dressing we pair with it is out of this world easy and delicious too! It’s great for topping on salads or other protein throughout the week!
Let’s talk nutrition…
Cherry tomatoes: great for our skin because of the vitamin A!
Chickpeas: has folic acid, which is essential for the development of brain and nerves (especially for pregnancy).
Olives: packed with antioxidants and vitamin E, it’s great for our skin!
Lemon: makes anti-stress hormones in the body!
Time saving hack…
Get this veggie chopper
If you wanted to cut your time even more, you can even grab this veggie chopper. It’s my new best friend in the kitchen. Just put your veggies in there & push down. Everything is chopped into even pieces! Then you can throw it in the dish washer!
