What’s going on!
It’s getting hot here in Santa Clarita, it it 96 last weekend. So I am spending almost every day at the pool with Olive. Our complex has a kids pool, which is amazing! There are tons of other kids that play in it, and parents can lounge by the pool while the kids play. For me, it’s more of a hover, bending down, picking her up and scooting her somewhere shallow but nonetheless we get to be outside lol.
I am headed to Alaska next week with Copper River Salmon for Salmon camp!! I’m going to stay in a remote town called Cordova and learn all about how the salmon is sourced. It will be the first time I am away from Olive for 6 days.. Can’t believe it’s happening. I would be lying if I said I am 100% confident in leaving her with other people, but I know she’s in good hands AND this is going to be a really amazing trip for me. It will share pics & videos on my social media so be sure to follow along!
Last thing, Troy is running kids basketball camps all month long. I have been in charge of dinner. I can’t create a big production while playing full-time parent, working and prepping dinner. So I have been doing a lot of easy recipes.
This week I am sharing my grilled shrimp tacos which are ridiculously easy to make. I make one sauce and thats the slaw marinade as well as the taco sauce. This was honestly the best taco recipe I have ever made….
This recipe I am sharing with you next week is a perfect example of a frozen meal made into a healthy meal. It’s my cauliflower fried rice and it’s SO GOOD!

Pesto crusted salmon!
I used to be a private chef for NBA athletes and this pesto crusted salmon was highly requested among all of the athletes I cook for. It’s just 4 ingredients, and it is ridiculously easy. I love serving it over pasta, and Olive ate it all too!

LightStim Blue and Red Light Therapy
Got the recommendation for this from my esthetician, and she said it’s great for blemishes so I requested it as a mothers day gift! It treats mild to moderate acne and calms existing breakouts. The blue-light therapy destroys acne-causing bacteria, while red-light therapy reduces redness. I’ve noticed it zaps my blemish before it starts!

Shrimp is hard to mess it up, and it’s packed with protein! It’s also low in calories, so it’s great for anyone watching their calorie intake. It only takes about 5 minutes to cook, and when paired with the store bought guacamole and slaw, it’s a showstopper that takes almost zero effort.
They only take 15 minutes, and it’s really easy to make. It’s our go-to in the summer here in California!
