Let’s get personal
These last 2 weeks have been really heavy on the Persian community. If you haven’t heard about what is going on in Iran, let me give you a brief update:
In 1979 there was a revolution in Iran where the Islamic Republic took over the country. Since then, the women have been extremely oppressed. Did you know that women are not allowed to sing in public, swim in open water, leave the country (unless authorized by their husband), or ride bikes? Yikes.
Last week, a women by the name of Mahsa Amini was killed by the morality police for wearing her hijab too loosely. This angered the people of Iran, and they swarmed the streets to protest the women’s right to freedom.
Usually when this happens, Iran’s government shuts down the internet access to the citizens so they cannot ask for help or show what’s going on. However this time, the word got out to the rest of the world. The people of Iran hope there can be a different outcome if we spread awareness on the topic.
As a proud Persian women, it’s important to me to spread awareness. So I shared a video to my Instagram feed. Please take a moment to watch it, and share it if you feel called. I really appreciate your support on this topic, it means a lot to me and my family.

My all time favorite recipe, ever…
Drum roll please… Pesto Crusted Salmon
I created my Pesto Crusted Salmon recipe when I was a private chef! I was cooking 12 hours a day, for 3 NBA players at once! My goal was to create really nutrient dense recipes for these professional athletes, but I actually didn’t have a ton of time to spend fixating on a single recipe.. They were eating way too much to do that.
That’s when Pesto Crusted Salmon was born!
I took really good quality, fatty salmon from Whole Foods, added a generous layer of pre-made pesto sauce on top, fresh lemon juice then Panko breadcrumbs. I baked this in the oven for 12 minutes, broiling for an additional 2 minutes to create this incredible crust.
The pesto soaks into the salmon, making it so juicy! I served this as a pre-game meal with some delicious pasta or as a fueling off day meal with a side of roasted veggies.
Overall, it takes about 15 minutes to make, start to finish and every single athlete loved it. When the athletes had friends in town, they would request this dish so their friends could try it. Little by little, the word got out and I became the salmon girl.

Pesto Crusted Salmon Recipe
Serves: 2
Total time: 15 minutes
Ingredients
2 salmon filets
1/2 cup pesto
I love Costco’s pesto for this recipe!
If you are dairy free, try a dairy free pesto!
If you are a fan of making your own, try this vegan pesto recipe
1 lemon, juiced
1/4 cup Panko breadcrumbs
Directions
Pat the salmon dry, then smear the pesto sauce evenly on the salmon, be generous.
Add the lemon juice, then sprinkle of breadcrumbs on top.
Air fry Instructions: 400F for 12 minutes, until salmon internal temperature is 145F.
Oven Instructions: Preheat your oven to 425F, bake the salmon skin side down for 12 minutes, then broil on high for the last 2-3 minutes to create a crust!
Recipe Notes
Store salmon in an airtight container in the refrigerator for up to 24 hours. However, it is best served immediately!
I love serving this on top of buttered noodles, with a side of roasted veggies. Try these Air Fried Green Beans or Air Fried Asparagus!
Substitute the Panko breadcrumbs for any other breadcrumbs (i.e. gluten free). I just prefer the crunchy Panko for this recipe!
