What’s going on..
I’ve been staying at my parents house in Santa Barbara and they have the dreamiest backyard filled with fruit trees. Olive’s favorite time of the day is after dinner when we walk around the yard and pick all of the fruit from the fruit trees to munch on. They have everything from lemons, limes, apples, figs and even guava! Here’s a picture of us picking some fruit!
Olive’s favorite fruit right now is figs! We love to roast it, then add it on a cracker with some goat cheese and honey. What is your favorite way to eat figs?
One more topic I want to touch on. Can we just give it up for moms that also work from home? This whole month I have been without childcare, no partner, while also trying to maintain a job, and it’s been crazy how much mental effort it’s taken. I have always had childcare, or my partner around to tag team so this has been a bit different for me. It truly is the hardest job. Harder than running a business & harder than a 9-5. So I just want to give a moment of appreciation for moms that stay at home with their kids. You. are. incredible. If you haven’t heard it yet today.

Pumpkin Chia Pudding
Chia pudding has honestly become my favorite breakfast lately because it requires very little effort and doesn’t spike my blood sugar. It’s so nice to start the day with something that fills me up and keeps me feeling good. It literally takes only 5 minutes to prep a big batch for the week, then I have a breakfast for every day! Plus, chia seeds are packed with fiber, protein, and healthy fats, so they keep me satisfied and help with digestion too!!
I added some pumpkin flavors to my signature chia pudding. It’s creamy, cozy, and tastes like a treat, but it’s still loaded with nutrients. My favorite part is that it's ready to grab in the morning. I love topping mine with nuts, seeds, fresh fruit!
Servings: 2-3 servings
Prep Time: 5 minutes
This makes about 2 to 3 servings, depending on portion size.
Ingredients
1 cup canned coconut milk (full-fat for a creamier texture)
1/2 cup pumpkin puree (unsweetened)
1/4 cup chia seeds
2 tbsp maple syrup (or sweetener of choice)
1 tsp vanilla extract
1 tsp pumpkin pie spice
Pinch of salt
Optional toppings
Greek yogurt
Roasted walnuts
Roasted sliced almonds
Banana slices
Directions
In a medium-sized bowl, whisk together the coconut milk, pumpkin puree, maple syrup, vanilla extract, pumpkin pie spice, and salt until smooth.
Stir in the chia seeds, making sure they're evenly distributed.
Cover the bowl and refrigerate for at least 4 hours or overnight to allow the chia seeds to absorb the liquid and thicken. I love to make this before bed, then set it in the fridge so it’s ready in the morning!
After chilling, stir the pudding for a smooth consistency. Serve cold, topped with whipped coconut cream, chopped nuts, or a sprinkle of pumpkin pie spice.
My tips for success!!
For the creamiest texture, opt for full-fat canned coconut milk. If you prefer a lighter version, you can use light coconut milk, but it will be less rich.
When mixing the ingredients, whisk well to avoid clumps of chia seeds. Stir again after about 10 minutes of chilling to ensure the chia seeds are evenly distributed and don’t settle at the bottom.
Taste the mixture before chilling and adjust the sweetness to your liking. Some people prefer a sweeter pudding, so add more maple syrup or another sweetener if needed.
For the best consistency, it's ideal to chill the pudding overnight. This gives the chia seeds enough time to fully absorb the liquid and thicken properly.
