This quick & easy roasted butternut squash and carrot soup is the one thing that makes me feel better when my stomach feels full and heavy. It’s so easy to whip up, especially when using pre-diced butternut squash.
I created this recipe back in 2021 when I did a functional medicine detox. I was going off of hormonal birth control and wanted to re-set my digestive system. I took my gut health seriously by taking L-Glutamine, drinking lots of bone broth and consuming collagen. I actually wrote a whole blog post healing my gut, you can read about it here.
Right before I got pregnant, I did an extensive liver cleanse. This was a 7-day program where I ate really nourishing foods. Again, this butternut squash soup was one of the recipes I enjoyed.
With all of that being said, everyone I am chatting with right now says they are overindulging and feeling more bloated than usual. It’s that time of year I guess. So I thought, I should share this recipe of mine with you. In case you are feeling a bit “off” in your body.
This soup is flavorful, light but creamy. It’s also vegan, dairy-free and gluten-free. In fact, it could also be given to your little babies! I hope you feel nourished when you eat it, and the best part is it makes tons of leftovers so you won’t have to cook again for a few nights!
