Last night’s dinner was very much a “what’s in the fridge” moment. But it turned out so good, I had to share!!

Lately, I’ve been making dinner earlier than usual because of Olive’s schedule. We usually like to eat around 5:30 PM, so we can play for an hour outside after dinner be in the bath around 7 PM.

One thing that makes me happy is letting Olive help with dinner. For example, she helped me prep the squash for the oven. She loves adding spices (aka wildly shaking the salt). It’s chaotic. It’s cute. I’m very into it.

This recipe is great because it just requires some “waiting time” which means we get to have a dance party and play a little bit until everything is cooked. I was honestly surprised she liked this one. I had some regular pasta sitting on the side of her plate in case she “refused” the spaghetti squash but she ate it : )

If a toddler doesn’t immediately spit it into your hand… we’re winning

This is one of those dinners that feels like you did something fancy, but it’s actually so easy. If you’re trying to eat a little lighter, sneak in more veggies, or just need a break from pasta, this is it. Spaghetti squash is a fun swap without the heavy feeling, and the turkey sauce is simple, protein-packed, and super flavorful. It’s healthy comfort food at its finest. And of course, beginner-cook approved!
