Spaghetti Squash Burrito Bowl
Before the pandemic, I taught in person cooking classes in Indianapolis, Indiana. It was a great way to teach simple recipes to the community. There’s something about watching someone else cook or doing it alongside them that makes you feel confident with the recipe.
Once the pandemic hit, nothing was happening in person so I pivoted and started hosting them on Zoom. I would have 4 different classes offered each month & once you signed up for the time slot, you would get a grocery list sent right to you to grab the ingredients to prep for class.
My Sunday meal prep classes were a hit. We would meet for an hour on Sunday evening & prep the recipe from start to finish. This spaghetti squash burrito bowl was one of the recipes we prepped in my online cooking class.

What is spaghetti squash?
Spaghetti squash is a type of squash that once cooked, the inside resembles strands of spaghetti! It makes a great swap for pasta, rice or any sort of bowl.
How to make it…
I pop it in the microwave for about 3 minutes, then slice it lengthwise with a sharp knife. Scoop out the seeds & drizzle a little bit of olive oil on the inside and place it face down on a baking sheet. Roast for about 30 minutes at 400F & once it’s out just scoop the inside with a fork. You got perfect noodles!
It is flavorful, easy to make, stores well and delicious. This recipe is gluten free, soy free and can easily be dairy free/vegan with a simple plant based cheese swap.
