Sun-Dried Tomato Baked Feta Pasta

This TikTok recipe went viral last year and there is a reason why! This creamy pasta dish is the most perfect comfort food recipe.
I think of it as a mix between a greek salad and a baked mac & cheese!
We add a few special ingredients into the pasta that will make your mouth burst with flavor.
The whole dish comes together in less than 60 minutes. It’s actually perfect for a weeknight meal because most of the cooking time is spent with it in the oven!
This meal can serve from 4 - 6 people! It also keeps really well in the fridge.
Let’s talk about the ingredients…
Pasta: I love using a gluten free pasta made from either beans (chickpeas) or brown rice. There are so many great alternatives now-a-days. Plus, if you use a noodle made from beans, it adds SO MUCH PROTEIN! I love using Banza!
Grape tomatoes: Did you know that tomatoes contain vitamin B? They help our bodies produce energy and even make anti-stress hormones.
Onion: I love using onion in recipes because it protects our cells from harmful cancer and free radicals.
Feta cheese: I love feta cheese, but if you’re not the biggest fan you can try swapping the block of feta for a few other cheeses. Try halloumi, goats cheese or even vegan feta!
Olives: Did you know that olives are great for both male and female reproductive health?
