Let’s be honest, every night I think “what am I going to make for dinner” and I am constantly looking for easy ideas. I don’t want to be in the kitchen for more than 30 minutes MAX! That also includes clean up and making Olive’s lunch for school the next day. Side note: I lay her lunchbox out when I am prepping dinner and I add things into it as I am cooking and prepping. That way, when I am done with making dinner, I am also done with making her lunch! It’s a little hack I find that helps me with efficiency.
Anywho… So when I am in that mood, I open up the fridge, see what I have and make use of it. I had meal prepped shredded chicken, beautifully buttery naan style flatbreads and I decided to put those together.
I thought, I have to share this with Substack! It doesn’t require you to think too hard. Just layer, bake and it’s done! You could easily make this gluten free, dairy free or swap the meat for vegetarian option! I added substitution options below! It’s flexible, fast, and makes the house smell like you did something impressive!
