What’s going on!
I hit a HUGE business milestone this last week! For the last 2 years I have put in all of my time and effort to grow my website traffic. It all started by re-creating my website on a new platform. This look months of migrating the content from my old blog to a new one.
I hired a web designer to create the site and the logo based off of the vision I had. Next, I hired a marketing team to help migrate all of the recipes and help with web traffic. After about 6 months, the blog was live and it was time to get the word out. I have been sharing 4 new recipes a week on my site for the last 18 months. This was all in hopes to reach more people all around the world. And to see my recipes pop up on Google search!
Once you reach a certain threshold of views, it unlocks the ability to apply to a full service ad management agency! The idea felt out of reach for me and hitting my target views was a huge realization that I can do hard things.
Why do I share this? You probably see me share a few recipes on Instagram every week, and there is so much more I have been cooking up in the background (no pun intended). I could never have done it alone. The Marketing Greenhouse team has been a huge part of my journey and I truly don’t think I could have hit this goal without them.
Anyway, I texted my best friend and told her I hit my goal and she responded.. “Did you go celebrate yourself? If you didn’t, I am going to be mad…” I realized I didnt even take a second to celebrate my 2 year goal being accomplished. How crazy. So I set the date on the calendar to go to my favorite brunch spot!
Too often in life, we go through the motions, without taking a step back to reflect on how far we have come. If you’re still reading this, I urge you to take 30 seconds to think about any accomplishments you had in the last week. It could be big or small. Maybe you got up right away after your alarm rang. Maybe you didn’t look at your phone when you woke up. Maybe you did 3 days of working out in a row. Whatever it is, take a moment to celebrate by treating yourself to something. Then think of me giving you a high five… I AM PROUD OF YOU, FRIEND.

No Bake ‘Cake’
I actually love this cake because it requires NO BAKING. Listen, I love to bake. I feel like it can be a really peaceful experience. But honestly, there’s nothing more discouraging than spending so much time getting all of the measurements correct and after waiting 40 minutes for it to bake, the cake comes out with a weird taste. Have you been there?
This no bake cake only takes 10 minutes to whip up, and it only calls for 4 ingredients! It keeps your kitchen cool because it doesn’t require an oven! This is by far the best light summer dessert. Perfect for that backyard BBQ, the weekend pool day or a fun family gathering. It’s so crazy easy to make, you’re going to flip out! 👇🏼
Prep time: 10 minutes
Total time: 6 hours (for the cake to set in the refrigerator)
Ingredients:
1 container (8 oz) Cool Whip (or any coconut whipped)
1 box graham crackers
1 pint fresh strawberries, washed and thinly sliced
1 pint fresh blueberries, washed and dried
Directions:
In a 5x7 rectangle dish, lay down a single layer of graham crackers, covering the bottom of the dish.
Spread a layer of the whipped topping mixture over the crackers.
Arrange a layer of sliced strawberries and blueberries over the whipped topping.
Repeat the layers one more time: graham crackers, whipped topping, and fresh berries. You should end with a layer of berries on top.
Cover the dish loosely with plastic wrap and chill in the refrigerator for at least 6 hours or up to overnight.
When ready to serve, cut the cake into squares and enjoy immediately!
My tips to elevate this recipe!
Add a crunch! If you love nuts, sprinkle a layer of finely chopped nuts, such as almonds or pistachios, between the layers for an extra crunch.
Chocolate lovers! Drizzle a bit of melted dark chocolate over each layer for an indulging touch!
How to store this! Leftover cake can be stored in the refrigerator for up to 2 days, in an airtight container!
