What’s going on..
Last weekend was easter! We spent the morning going to church, I was a little nervous for it because I wasn't sure how Olive would do sitting in our lap for 1 hour. But I was surprised when I saw they had a “family room.” It was essentially a big room for families and kids, with more chaos & less organization lol. There were chairs set up with clean blankets next to each row for the kids to sit and play. They had a big screen where we could all listen & watch. The kids were all dancing to the songs & they even had some fresh fruit. Olive had a great time crawling around, watching the other kids dance, and eating her fresh fruit.
Here’s a photo from last year’s Easter & this year! It was really special to me to have this side by side comparison. What a year can bring!
I go through some funks within my business where I feel a bit confused about what to share and post. Sometimes I feel like every recipe is received well, and other times I feel like it’s a fail. It is always helpful to hear what resonates with you, what you like to see & what recipes you look for. If you have the time, I would love your feedback!

The easiest shrimp pasta recipe

The shrimp is easy to make and does not have any breading like panko or cornmeal.
It is super quick to throw together. The whole thing is ready in 20 minutes, making this simple recipe a perfect dinner for busy weeknights.
It only requires a few ingredients.

Tortellini Skewer Appetizers!
Total time: 20 mins
Serves: 4
INGREDIENTS
1 package (about 9 ounces) of tortellini pasta, any kind
4-6 ounces of thinly sliced salami
8-10 small mozzarella balls
6 slices of provolone cheese, cut into quarters
1 cup of roasted marinated bell peppers, sliced into 1 inch bite-sized pieces
1 cup of jarred artichoke hearts, drained and halved
1 cup of cherry tomatoes, halved
2 tablespoons of olive oil
1-2 tablespoons of fresh lemon juice (adjust to taste)
2 tablespoons of fresh parsley, chopped
Wooden skewers (quantity depends on how many skewers you want to make)
DIRECTIONS
Cook the tortellini pasta according to the package instructions until al dente. My tip is to cook them about 2-3 minutes shy of al dente as you don’t want them mushy on the skewer. Drain and set aside to cool.
Assemble your skewers: Thread one piece of tortellini pasta onto the skewer, followed by a folded slice of salami, a mozzarella ball, a quarter slice of provolone, a piece of roasted bell pepper, half of an artichoke heart, and a cherry tomato half. Repeat until the skewer is full, leaving a little space at the top for easy handling. You can do it in any order you prefer! Have fun with it.
Repeat the process until you have assembled all your skewers.
Arrange the skewers on a serving platter.
In a small bowl, whisk together some olive oil and fresh lemon juice to make a simple dressing.
Drizzle the olive oil and lemon juice dressing over the skewers.
Sprinkle the chopped fresh parsley over the skewers as a garnish.
Serve immediately and enjoy your delicious Tortellini Pasta Skewer Appetizers!
