Watermelon Feta Summer Salad

This watermelon feta summer salad is inspired by a traditional Persian breakfast! When I was in high school, I would wake up on a Saturday morning to the birds chirping outside. I would head to the kitchen to find my mom had set up the breakfast table, complete with slices of fresh watermelon, blocks of feta cheese (always in brine), soaked walnuts (in water) and slices of lavash bread.
We would each have our own plate to create our own “loghmehs” which meant, “bites of food.” We started with a square of lavash bread, spread some feta on top, then a slice of watermelon and soaked walnuts. We rolled it up, like a rolled taco and enjoyed it as a summer breakfast.
