How to make my air fryer eggplant pizza!

1/4 cup grated Parmesan cheese

Preparation Time: 20 minutes (plus 20 minutes for salting)

Ingredients:
1 medium-sized eggplant

1/2 cup pizza sauce
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
Fresh basil leaves, for garnish
Instructions:
Start by preparing the eggplant:
Wash the eggplant and slice it into 1/4-inch thick rounds.
Place the eggplant slices on a wire rack or a baking sheet lined with paper towels.
Generously sprinkle salt over both sides of the eggplant slices. This helps remove excess moisture and bitterness. Allow the salted eggplant slices to sit for 20 minutes.
After 20 minutes, you'll notice moisture on the eggplant slices. Use paper towels to gently dab the eggplant dry, removing as much salt and moisture as possible.
Preheat your air fryer to 375°F (190°C) for a few minutes.
Lightly spray or brush the eggplant slices with olive oil on both sides. This will help them become crispy in the air fryer.
Place the eggplant slices in a single layer in the air fryer basket, making sure they don't overlap. You may need to work in batches depending on the size of your air fryer.
Air fry the eggplant slices for 15 minutes. You want them to be tender but not mushy.
Once the eggplant slices are cooked, remove them from the air fryer and let them cool for a few minutes.
Now, it's time to assemble your eggplant pizzas:
Spoon a tablespoon of pizza sauce onto each slice and spread it evenly.
Sprinkle shredded mozzarella cheese on top of the sauce.
Add a sprinkle of grated Parmesan cheese for extra flavor.
Place the assembled eggplant pizzas back into the air fryer basket, ensuring they are in a single layer.
Air fry at 375°F (190°C) for an additional 10 minutes, or until the cheese is melted and bubbly, and the edges of the eggplant slices become crispy.
