How to make my air fryer eggplant pizza!

1 medium-sized eggplant

1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese

Instructions:
Start by preparing the eggplant:
Wash the eggplant and slice it into 1/4-inch thick rounds.
Place the eggplant slices on a wire rack or a baking sheet lined with paper towels.
Generously sprinkle salt over both sides of the eggplant slices. This helps remove excess moisture and bitterness. Allow the salted eggplant slices to sit for 20 minutes.
After 20 minutes, you'll notice moisture on the eggplant slices. Use paper towels to gently dab the eggplant dry, removing as much salt and moisture as possible.
Preheat your air fryer to 375°F (190°C) for a few minutes.
Lightly spray or brush the eggplant slices with olive oil on both sides. This will help them become crispy in the air fryer.
Place the eggplant slices in a single layer in the air fryer basket, making sure they don't overlap. You may need to work in batches depending on the size of your air fryer.
Air fry the eggplant slices for 15 minutes. You want them to be tender but not mushy.
