I love making this Kale and Brussel Sprout Salad with Warm Shallot Dressing as we head into the fall. It’s light, fresh and cozy without being a boring, same-old salad!
Just devote 15 minutes to prep & cook… you’ll be thanking yourself!
This recipe is inspired my one of my favorite veggies: BRUSSEL SPROUTS! I think they are so versatile, I love air frying them - check out my recipe here! But when you sauté them (like we do in this recipe) they get a little charred which is delicious!
If you’re cooking for yourself: This is a perfect meal prep style meal. The kale and Brussel sprouts are so hearty that it could last you 3-4 days in the fridge! This is one of those salads that tastes better over time with the dressing marinating in the greens!
If you’re cooking for a partner or family: This recipe will make enough for 4 servings!
We pair the kale salad with a warm shallot dressing. The dressing can also be used as a pairing for poultry, tofu or even on top of grain bowls (like farro and brown rice).
This salad is vegan, gluten free, grain free, low carb, soy free, nut free and tomato free for all of my allergy conscious friends.
This salad is one of my personal favorites, why? Because I love when I can pack a ton of nutrition in a meal. Let’s go over some of the incredible nutritional benefits!
KALE: packs tons of vitamin C, it’s actually a top antioxidant food! That means it helps get rid of the free radicals (that cause aging) in your body!
CHERRY TOMATOES: are great for your hair, skin and nails! Snack on these while you make the salad!
CUCUMBERS: detoxify the body from free radicals (again, that’s what causes aging).
BRUSSEL SPROUTS: contains vitamin B6 and helps filter out harmful blue light from your eyes!
Here’s an idea, make a batch of farro, brown rice or wild rice. Then serve this salad on top of that for a cozy fall meal. I mean…. I AM DROOLING JUST THINKING ABOUT IT.
