If you’re opening this on Thursday morning, it’s the big day! The day of feasting!
I love thanksgiving, but it’s not necessarily for the abundance of food (although that’s a perk), but because it’s a day we get to spend being grateful! Every year the day is spent with loved ones, catching up, being grateful and eating good food.
In my family, we have a tradition of going to my aunt’s house. She has a HUGE dining table that seats about 25 people! We all sit around it and before we dig into dinner, we go around saying what we are grateful for. So I thought I would share 2 things I am grateful for this year:
I am grateful for my health. The last few weeks have been a little tougher on me because of the issues with my neck. If you need more context - watch this. I am grateful that even through the pain, I am still alive & still able to experience memories, happiness, laughter and growth.
I am grateful for YOU. Because without you, I wouldn’t be able to spend every single day in the kitchen, doing what I love - sharing how to make healthy food. So thank YOU, for supporting me on social media, subscribing to my newsletter, and sending me amazing messages.
Now for the good stuff, let’s get to this awesome leftover air fried mashed potato cake recipe, with fried eggs on top!
Everyone has a fridge full of leftovers, why not take out those mashed potatoes and make an easy brunch recipe? It’s even gluten free, dairy free and sugar free! Everyone will be sure to love this!
Don’t have an air fryer? That’s fine, you can bake it in your oven, the directions will be below!
Let’s talk about some of the ingredients:
Leftover mashed potatoes: you can use any kind you have on hand! Leftover mashed potatoes work well too because they are a little colder & can easily be formed into patties!
Gluten free flour: Honestly any flour will work, but I wanted to make this gluten free friendly! All purpose flour, oat flour, almond flour or even wheat flour!
Spices: I added paprika and oregano but you can totally use your favorite spices. Think onion powder and garlic powder!
