It’s pumpkin season!
Pumpkin season has officially begun and before we get all excited about all things pumpkin flavored, I thought it is beneficial to know exactly what pumpkin actually does for us!
Fiber: pumpkin is high in fiber! So it helps keeps those bowels moving!
Antioxidants: it helps protect your cells from damage that free radicals cause!
Immune support: it is packed with vitamin C so it’s great to fight off those fall/winter bugs!
Post exercise recovery: it contains potassium, which is awesome for those leg cramps you get post workout!
Great for the eyes: it has a ton of vitamin A, which helps us maintain good eyesight.
Great for hair: the vitamin A helps to contribute to strong and healthy hair!

No bake pumpkin energy balls
Grocery List
Substitutions listed next to each ingredient
Non-Perishables
1 cup oats - I prefer organic, whole grain or quick cooking oats
1/4 cup nut butter, seed butter or granola butter - you can use anything you have on hand. Examples include, almond butter, peanut butter, granola butter, sunflower seed butter etc.
1/2 cup canned pumpkin puree - make sure this is canned pumpkin puree and not canned pumpkin pie filling.
1/4 cup hemp seeds - swap for ground flax seeds or chia seeds
2 tablespoons coconut sugar - use brown sugar, maple syrup, agave or honey as a substitute.
Spices
1 tablespoon pumpkin pie spice
How to make these pumpkin balls!
Prep Time: 10 minutes
Makes: 24 balls
Ingredients:
1 cup oats
1/4 cup nut butter, seed butter or granola butter
1/2 cup canned pumpkin puree
1/4 cup hemp seeds
1 tablespoon pumpkin pie spice
2 tablespoons coconut sugar
Directions:
Into a food processor, add the oats, nut butter, pumpkin, hemp seeds, pumpkin pie spice and coconut sugar. Blend until incorporated.
Roll the dough into 1 tablespoon size balls. Store in an airtight container.
Recipe notes:
If you prefer your balls more smooth, process the oats and hemp seeds until more of a flour forms. Then add the remaining ingredients.
If you don’t have a food processor, just mix the ingredients together in a large bowl with your hands. That works great, it just won’t be as smooth but some people prefer it like this anyway!
Storage:
Store these balls in an airtight container (I like to use a glass jar), in the fridge for up to 7 days!
Alternatively, you can freeze for 3 months! This is great if you make a bigger batch!
