Peach & goat cheese salad
My parents have the most wonderful garden in their backyard, and this year the peaches are growing like wildfire. When I tell you that these peaches taste like candy, they taste like literal candy they are so sweet!
Needless to say, I have so many peaches from their fruit tree so I was experimenting with some peach recipes! This one is a 10/10 when it’s hot outside.
The sweetness from the peaches, with the creaminess of the goats cheese is out of this world tasty. I added fresh herbs for a pop of flavor.
This salad is less than 10 ingredients, and truly is the best summer side dish. Bring it to a BBQ, a pot luck or serve a rotisserie chicken on top! You’ll be amazed!

Grocery list
Take this list to the grocery store with you!
Produce
2 ripe peaches - swap with strawberries, blueberries or blackberries
4 cups any salad greens - arugula, baby spinach, romaine or mixed greens
1/4 cup basil - swap for mint
Dairy
1/2 cup crumbled goat cheese - swap for feta cheese or even a non-dairy feta cheese
Non-Perishables
1/4 cup sliced almonds, walnuts or pecans - swap for sunflower seeds if you are nut free
3 tablespoons balsamic vinegar - swap for a rose vinegar
2 tablespoons olive oil
1 teaspoon honey - swap for maple syrup
Salt and pepper to taste
Peach & goat cheese salad
Ingredients
2 ripe peaches, halved and pitted
4 cups any salad greens (arugula, baby spinach, romaine or mixed greens)
1/2 cup crumbled goat cheese
1/4 cup basil, finely sliced
1/4 cup sliced almonds, walnuts or pecans
3 tablespoons balsamic vinegar
2 tablespoons olive oil
1 teaspoon honey
Salt and pepper to taste
Directions
Into a large bowl, add your spring mix, chopped peaches, basil, nuts and goat cheese.
Drizzle with balsamic vinegar, olive oil, honey, salt and pepper to taste.
Give it a quick toss & serve as a side to your favorite protein!
